Sweet Potato & Kale Hash with Baked Eggs & Ricotta Toasts

I mentioned this dish on my post, My Favorite Vegetarian Recipes. This is a delicious vegetarian hash that is easy to put together and happily feeds four people. I found this recipe through using the meal delivery service, Blue Apron. Most of my love and knowledge of cooking has come from using Blue Apron, so I really cannot recommend their service enough. I have stopped using them for now, just due to cost, but I still use most of their recipes again and again. I love making this dish for my family and I will share some of the variations I have made to make this an even tastier meal.

Ingredients:

  • Eggs (one per person)
  • 1 Small Baguette (I used Ciabatta Bread, so use anything that looks good to you)
  • 3 Cloves Garlic
  • 2 Sweet Potatoes
  • 1 Bunch Kale
  • 1 Lemon
  • 1 Yellow Onion (I used a combination of half of a Vidalia Onion and a Red Onion and it was great)
  • ½ Cup Part-Skim Ricotta Cheese
  • ¼ Cup Crumbled Goat Cheese (I love using flavored Goat Cheese, mine had honey in it, so have fun trying different flavors in the dish)
  • ¼ Teaspoon Crushed Red Pepper Flakes

Here are some of my tips for making this meal even better:

When preparing the sweet potatoes, make sure you have a sharp knife and a steady hand. They can be difficult to cut through lengthwise so just be safe when handling.

When roasting the sweet potatoes I rotate the pan halfway through the cooking time suggested to make sure they brown more evenly. In the past I have burned them, so just be sure to check on them and start with less cooking time.

Because I was feeding four people I ended up doubling the ricotta cheese, lemon, and olive oil mixture to put on the ciabatta bread. Use your best judgement for how much you will need and luckily it is easy to make more.

In order to caramelize the onions you want to stir less and cook longer.

The kale will shrink considerably when cooked, so make sure to use more than you expect to need.

I have three people in my household who like eggs and one who does not. I just make sure to space out the eggs evenly and leave a portion that has no egg at all.

The ciabatta bread I used was big, so I ended up cutting into smaller portions. The ricotta toast is probably the best part of the dish and I love making this on its own as well.

I can’t recommend using a cast iron pan enough for making this dish. It really makes it so much easier when cooking the eggs. Cast iron pans have become my go to tool in the kitchen for just about everything.
